Apricot Matcha Latte

Fresh ripe apricots can complement the earthy flavors of matcha quite well. Here’s a recipe for an Apricot Matcha Latte that you can enjoy with soy milk or any milk of your choice:

Ingredients:

2 fresh ripe apricots
1 teaspoon matcha powder
1 tablespoon hot water
1 cup soy milk/almond milk or milk of choice
Sweetener (optional, to taste)

Instructions:

  • Cut the fresh ripe apricots in half, remove the pits, and dice them into small pieces.
  • In a small bowl, whisk the matcha powder with hot water until smooth and frothy.
  • In a saucepan, heat the soy milk (or your preferred milk) over medium heat until it starts to steam. Be careful not to let it boil.
  • Add the diced apricots to the saucepan and simmer for 2-3 minutes, or until the apricots soften slightly. (You can also skip the heating step and directly blend apricots with milk of your choice.)

  • Taste the latte and add sweetener if desired. You can use honey, agave syrup, or your preferred sweetener.
